Sustainable Farming
In 1983 Sterling Caviar became the first commercial sturgeon farming operation in California. Then began the 6.5 to 10 year process of spawning broodstock, nurturing the sturgeon fish over time. Caviar owns and operates four white sturgeon farms in Sacramento, California, with water coming from the California Foothills, supplying pristine water used to tend to the family of stock. After special tank reconfigurations, Sterling became the first in the world to have produced commercial quantities of caviar from tank-raised sturgeon. Rest assured Sterling aquaculture and processing meet the standards for legal international trade in caviar and sturgeon products, and follows all required federal, state, and local authorities for food processing.
Caviar Variety
With a selection of four classes – Classic, Royal, Supreme, and Imperial – each variety of Caviar offers it’s own unique characteristics and flavor. Sterling Classic grade white sturgeon caviar is distinguished by its small to medium, semi-firm to very firm eggs with a typical onyx appearance. On the palate, a robust nuttiness melts away into a smooth, buttery finish. The Royal Caviar, also known as “Black Gold” is slightly larger and can be lighter in appearance then the Classic grade. Due to its consistent taste and texture, this is an all-time favorite of newbies and connoisseurs alike. Further, a favorite among the finest chefs, Sterling Supreme grade white sturgeon caviar is characterized by large, firm eggs with a range in color from onyx to light or dark brown. A complex combination of hazelnuts and earthy tones gives way to a velvety finish, sure to please caviar lovers. Finally, the creme de la creme, Sterling Imperial grade caviar is extremely rare due to the combination of its large pearl size and olive to gold or blond coloring.
