In true French fashion, caviar service is offered to start off the dining experience with homemade blinis and carefully thought-out garnishings. Crème fraîche is livened up with capers and dill, while hibiscus pickled red onions add another level of flavor to the delicacy dish. In between each tasting of caviar, watermelon soaked with vodka and lemon will refresh your palate allowing you to savor every bite. Adding to the French themed tasting menu in worldly fashion, the Foie Gras Terrine and Chestnut appetizers brings together trans continental ingredients. Hudson Valley foie gras pan seared terrine is topped with Castelnau de Suduiraut Sauternes jelly and Timut peppercorn from Nepal. Ontario roasted Maitake mushroom with meat jus and shallots are suspended in a chestnut truffle butter veloute with croutons and hazelnut from Alba Italy, shaved burgundy truffle. More than only food, each dish is artfully plated and intended to be thoroughly enjoyed in the intimate setting.
