Exceptional fishermen source their claws daily from the Florida Keys and are held to a very high standard when fishing for stone crabs, and catch a variety of sizes from medium, large, and jumbo, to colossal . Only 1 claw is carefully removed during harvest, then the crab is released back into the water. This allows for the stone crab to regrow its claw 6-7 times during its life.
